Parsley and Chive Butter

2 Tbsp. chopped Parsley
1 Tbsp. chopped Chives
8 oz. butter, slightly softened
1 Tbsp. fresh lemon juice
salt and pepper

Beat the Herbs into the butter, then add
the lemon juice, salt and pepper. Mix until
smooth.
Chill before serving. Shape in a mold if desired.
Store in a cool place, or freeze in an ice-cube tray
for handy portions.
Spread on sandwiches, toast, crackers, grilled
meats and fish, vegetables.
You can use other Herbs to flavor butter, such as
Chervil, Chives, Garlic, Rosemary, Sage, Salad Burnet,
French Tarragon and Thyme.
You can substitute softened cream cheese to
make a spread.
