Dill 'n' Herbs Potatoes

3 Tbsp. olive oil
6 large potatoes, peeled and cut into 1" pieces
3 cloves Garlic, coarsely chopped
1/4 tsp. sea salt
2 tsp. fresh Thyme or Lemon Thyme leaves
(1 tsp. dried)
1 tsp. Dill leaves, chopped
(1/2 tsp. dried)

~ Pour olive oil in bottom of 9" x 13" pan.
~ Stir in potatoes, salt and Garlic. Stir to coat with oil.
~ Bake at 400 degrees for 20 minutes.
~ Remove from oven, sprinkle with Herbs and bake for
20 - 30 more minutes, until potatoes are tender.
Makes 6 servings
